House of Chicken & Waffles Opens Rhode Island’s First Restaurant Dedicated to Chicken & Waffles

RIBBA Joins Owners Richard and Adonis in Celebrating Providence Grand Opening on July 31, 2026

RIBBA is proud to join Richard Monroe and Adonis Cossia in celebrating the grand opening of House of Chicken & Waffles, Rhode Island’s first restaurant dedicated exclusively to chicken and waffles. The public is invited to attend the ribbon-cutting ceremony on Friday, July 31st, at 5:30 p.m. at 105 Plainfield Street in Providence. The celebration will include live music, complimentary food samples, giveaways, and an opportunity to meet the owners.

After first introducing their concept through a successful food truck, Richard and Adonis have transformed their vision into a permanent restaurant centered on Southern-inspired comfort food prepared with Halal ingredients. Their mission is simple: provide exceptional food at an affordable price while creating jobs and serving the community.

More than just another restaurant, House of Chicken & Waffles offers a dining experience unlike any other in Rhode Island. Guests can enjoy more than 20 waffle flavors paired with specialty butters, flavored syrups, honey selections, premium chicken options, seasonal offerings, and gluten-free choices. Every detail—from the ingredients and presentation to the restaurant’s branding and signature theme song—has been carefully crafted to create a memorable customer experience.

“Our goal has always been bigger than opening a restaurant,” said co-owner Richard. “We wanted to build something that creates jobs, serves our community, and can one day grow without sacrificing quality. Every decision has been about building a repeatable system while delivering an exceptional customer experience.”

“We did not want to create just another restaurant,” added co-owner Adonis. “We wanted to build an experience. Whether it is someone’s first visit or their fiftieth, we want them to enjoy incredible food, explore our more than 20 waffle flavors, and leave feeling like they discovered something special.”

The journey to opening the restaurant required years of planning and refinement. The owners focused on creating consistent operating procedures, improving customer service, reducing waste, and developing a business model that can support future expansion while maintaining the quality that customers expect.

Richard has been a RIBBA client for more than ten years and has worked with the organization on other entrepreneurial ventures. Throughout the development of House of Chicken & Waffles, RIBBA provided legal guidance to assist with the owners’ partnership agreement, marketing support to build awareness, and a $3,000 Grand Opening Grant to help launch the restaurant and celebrate this milestone.
